The air is a tad cooler here in Little Rock. I am so ready for Fall. I love the aroma's of fall cookin' in the kitchen. Fall by far is my favorite Season! Tonight's Sunday Supper consisted of Mozzarella Stuffed Chicken, Mashed Potatoes and those Best Darn French Green Beans that I have posted about. We were pleased with tonight's supper. For the chicken I headed to The Fresh Market and purchased for $3.99 each the pre-stuffed mozzarella chicken breast. These are delicious and don't take long to make. I just pre-heated the oven to 375 Degrees, Topped with the Lowry's Garlic Pepper and a half cup of the Bertolli's Marinara Sauce. Bake at 375 Degrees for 25 minutes and the are delicious and tender. The Mash Potatoes - I love the red potatoes to make my mashed potatoes. My mama only used red potatoes. I grew up loving them and they don't disappoint when you want to make mashed potatoes. The nice thing about mashed potatoes is that you can make them in so many different ways by just changing or adding some ingredients. Tonight's potatoes I just used one stick of the Country Crock's Unsalted Stick Butter, 1/4 cup of 2% Percent Milk, Salt, Pepper and topped with just a sprinkle of chives. I used a hand whisk to cream them together. They were delicious and went well with the Mozzarella Chicken. French Green Beans - This is the only way you will get me to eat green beans. I am not a fan of standard green beans and sure don't want them canned. These are awesome! I buy them fresh at The Fresh Market. Soak them in the Wish Bone's EVOO Avocado Dressing while you are boiling your potatoes. After you soak, put in a small pan, along with the EVOO Avocado Dressing and top with about 1-2 tablespoons of the Lowry's Garlic Pepper. Cook them on your stove top on low and let simmer until tender. They only take about 10-12 minutes and they are great! This meal is easy to make and can be done in about 30 minutes max. Also, an inexpensive meal for two. The total meal averaged around $7.00 each. That includes adding in the extra ingredients. The couple of local restaurants that serve this type of food would run about $12-16 dollars each. Enjoy your Sunday Supper's together! They come and go so quick. xoxo - Pat Comments are closed.
