
Peppermint Patty Granola
My Holiday Peppermint White & Dark Chocolate Granola is making it's buzz on Instagram. This Peppermint Patty batch is filled full of Christmas Flavors. I made a huge batch to feed a large crowd. This is a perfect Hostess gift, friends gift, or to gift to your mailman, etc.
The batch is delicious and it is filled with so much "Christmas."
I used the whole 42 ounce Container of the Quaker Old Fashion Oats to make this. It made two very large cookie sheets worth. I filled 6 Ziploc bags full. I am going to condense it down below.
Ingredients
4 cups Quaker Old Fashion Oats (make sure they are old fashion)
1 cup Dark Chocolate Chips
1 cup White Chocolate Chips
3 Tablespoons of Organic Cinnamon
1/2 cup of Caramel Sauce (I use Smucker's)
1/4 cup Light Brown Sugar
2 Teaspoons of Vanilla
10-12 White Chocolate Covered Pretzels (chop to garnish in)
1 Small Bag of Plain Red & Green M & M's
1/2 cup of The Cranberry Almond/Cashew Mix (Orchard Valley)
1/2 cup of Dark Chocolate Almonds (Orchard Valley)
1/4 cup of Canola Oil
Preheat oven to 375 Degrees
To Make:
In a large mixing bowl add in the 4 cups of Quaker Old Fashion Oats
Pour in the 1/4 cup of Canola Oil and Mix together
Add in the Vanilla & Caramel Sauce and Mix together
Add in Brown Sugar and mix
Start folding in your other ingredients and mix together well.
NOTE: The mixture should be damp not dry. If it is dry, add more wet ingredients (such as caramel sauce) It needs to be moist when you put it on your liner sheets.
Make sure and line your cookie sheets with a liner. Pour granola mixture on to liner sheet and spread evenly. (See picture below).
Bake at 375 Degrees for approx. 20 minutes. I turn my pan at the 10 minute mark. Remove from oven when the oats are golden.
Let cool. Bag in an airtight container or Ziplock bag. The granola will thicken as it cools in bag. It will last up to a week or more if you keep in an airtight container.
The key to making good granola is to have the granola mixture moist when it goes in oven. Also, rotate your pan as it is cooking so it is toasting the whole batch. Don't be afraid to add in your favorite ingredients. I also will taste test the granola. If it is good raw going in, it will be excellent after it roasts. I also will add more cinnamon on top right before I put in oven.
