
July is National Ice Cream Month. My friends at Yarnell's messaged me on Instagram and reminded me of that. Not that I need an excuse to eat ice-cream, I am a big fan of this Arkansas based Company. I jumped at the idea to make a delicious treat and serve it up with some of my favorite homemade vanilla.
Mystic (one of my co-worker's) was given some fresh hand picked peaches from a friend. She brought in just enough for me to make up a fresh batch of peach crisp to have with our fantastic ice-cream. Mystic was kind of enough to slice up the fresh peaches to get ready for me. I tend to be a little clumsy at work. It is just best to take away the sharp knives as much as possible.
My goodness this sure was tasty. It went over great at the office. In fact, boss was offering some of our Subcontractor's some. The only problem with that..............it was all gone!
Like I have mentioned before, I am one of those "make it your own" kind of cooks/bakers. I use a pinch of this and that along with a palm of this and that. But here is the skinny on how I made this wonderful peach crisp.
Ingredients:
6 fresh ripe peaches
2 cups Quaker Oats (Old fashioned - not quick)
1 cup Brown Sugar
1 1/4 cups Sugar
2 teaspoons vanilla
6 Teaspoons of Cinnamon (I use Organic Cinnamon)
1/2 cup flour (All Purpose)
1 stick of Butter (I used margarine)
To Make:
Pre-heat oven to 350 Degrees (we fired up old Betsy at our office)
Spray a 9x13 baking pan (I use a glass one that Mystic brought it)
In a large mixing bowl:
Put in your sliced Peaches
Sprinkle 3 of your teaspoons of the Organic Cinnamon on top
Top with 1/4 cup of Sugar
Top with 1/2 cup of Brown Sugar
1 Teaspoon of the Vanilla
Stir well throughout the Bowl to coat the Peaches
In another mixing bowl:
Add 2 cups Quaker Old Fashion Oats
Add in 1/2 cup Brown Sugar
Add in 1 cup Sugar
Add in 1 teaspoon Vanilla
Add in the 1/2 cup of All Purpose Flour
Stir together well
Transfer your Oat Mixture into your 9 x 12 baking dish
Transfer your Peach Mixture on top of the Oat Mixture in baking dish
Slice your 1 stick of Margarine and spread on top of the mix throughout the pan
Stir together and make sure baking dish is covered with the mixture of the oats and peaches
Bake at 350 Degrees for approx 30 minutes until peaches are tender and oats will be golden.
Once out of the oven, I sprinkled a few more shakes of the organic cinnamon throughout the baked crisp. I love this organic cinnamon.
We made parfait cups:
Add 2 scoops of the Yarnell's homemade vanilla ice-cream to each cup
Top with 1 large scoop of the Peach Crisp and serve
This was a delicious treat that was very popular at the office. This 9 x 12 pan of the peach crisp was enough to make 10 good serving (like pictured above)
