You all know how much I love granola. I love the combination of oats, chocolates, nuts, organic cinnamon's and more. A couple of years ago I posted a recipe for some no bake peanut butter energy balls. There are many ways to make them, along with many ingredients you can put into the batch. I was watching an episode of The Vine that included the beautiful Eizabeth FInch from Elizabeth FInch Wellness and she included some of her energy balls. Elizabeth and I may have an aged gap, however, we have some of the same passions. Oats, granola and sustainability.
I made a batch of energy balls without the flax seeds. I didn't have any in my pantry, so I substituted with a variety of gourmet nuts & raisins. This wonderful bites don't require many ingredients. I usually keep ingredients in the pantry for the granola I make often. All you need is old fashioned oats, cacao powder, maple syrup, a variety of nuts, (or flax seeds), vanilla, cinnamon, (I use organic Vietnamese) coconut flakes, and warm water. Simply throw all the ingredients in the food processor (except for the coconut flakes) and pulse until the ingredients combine. You can add warm water to the mixture to allow them to form better. Make sure when you do add the warm water (or more maple syrup) you pulse again.
Transfer the ingredients into a mixing bowl. Form into balls (my batch made about 20 large) and roll the balls in coconut flakes. It is easy to do this if you have a small bowl of coconut flakes set aside. Place your energy balls into an air tight container and place in the fridge. I took mine to work and we all enjoyed them for breakfast. WARNING: They were all gone and I didn't get one for my late afternoon pick-me-up. Make sure and set a couple aside for your late afternoon energy boost.

The Cacao powder is an organic superfood. It is vegan, gluten free and filled with antioxidants. It just takes about 3 teaspoons of the powder to your 2 cups of old fashioned oats. I stick with Quaker oats as much as possible. I have eaten Quaker oats since I was a kid. I only used a handful of the nut mixture (about a 1/2 cup.) 2 teaspoons of the organic cinnamon, and about a 1/4 cup of the maple syrup. If you are cutting down your batch to a small one. Then you will only need about 2 Tablespoons.
Here's the deal that I tell people about these kind of recipes: Taste your mixture before your roll them. If they taste good in the raw form, they will really taste good when cooked, or in this case, formed overnight. You can add some natural sweeteners if you like. The purpose of these energy balls, is to cut down the added sugars that give you that "sugar crash."

2 cups Quaker Old Fashioned Oats
1/4 cup Maple Syrup
2 Teaspoons of Organic Cinnamon
3 Teaspoons of Cacao Powder (you can add more if you want more chocolate)
1 Teaspoon of Vanilla
1/2 cup of gourmet nuts (mine also included sunflower seeds & raisins)
3-4 Teaspoons of warm water (as needed)
1/2 cup of coconut flakes (for rolling)
