
Sunday Brunch is a staple in the South, East, North & West. I know us southerners love our Brunch. However, there is just something about a Sunday Brunch that just makes you feel warm & cozy inside. Don't you agree?
I love a good Brunch that consists of a breads, cakes, cookies, bacon, sausage balls, etc. You get the idea! Breakfast food in general is just my favorite kind of food. One of my favorite breads to include on Sunday Brunch is orange cranberry bread. The combination of rich cranberries with zesty orange is just heavenly. The dough also forms a pretty pink color. I wish the bread would come out that way!

Here's an easy recipe for Orange Cranberry Bread:
INGREDIENTS
- 2 cups all purpose flour
- 3⁄4 cup sugar
- 1 1⁄2 teaspoons baking powder
- 3⁄4 teaspoon salt - (I use pink Himalayan salt)
- 1⁄2 teaspoon baking soda
- 1/4 cup butter, softened - I use Kerry Gold Irish Butter. It's just so rich and delicious.
- 1 tablespoon orange zest
- 3⁄4 cup orange juice
- 1 large caged free egg
- 1 cup cranberries, chopped (fresh or frozen)
- 1⁄2 cup nuts (optional)
- 1 tablespoon orange juice
- Powdered Sugar for the Topping (I use Organic)
Instructions:
- Grease/spray bottom only of a 9x5 loaf pan.
- Combine flour, sugar, baking powder, salt, and baking soda Add margarine and mix until crumbly.
- Add peel, 3/4 c orange juice, and egg; stir until moistened Add cranberries and nuts.
- Pour batter (it will be thick) into pan and bake until a knife comes clean from the center.
- For a 9" loaf, about 55-65 min at 350F (watch after about 40-45 minutes, depending on your oven). P.S. I generally always turn my pans throughout the baking process
- Let cool completely. It's easy to remove if you have sprayed your pan well.
- Top with Organic Powdered Sugar.
