
Pineapple Casserole - The Perfect Side Dish
The other day I called into the Buzz Radio Show to talk about the Blog Post on Ronda from Chic-Fil-A. The Buzz was also doing a segment for Christmas in July. They asked me what my favorite Christmas side dish was. I replied ---Pineapple Casserole. This side dish is so good I could really eat it daily. While it is popular at Christmas, it is great for Potlucks, taking a dish to a sick friend, a new mother or a grieving family. It really is delicious and so easy to make!
Ingredients:
1 cup sugar
6 tablespoons all-purpose flour
2 cups Kraft Shredded sharp cheddar
2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
1 sleeve Ritz Crackers (chop into crumbs)
8 tablespoons (1 stick) butter, melted, plus extra for greasing pan
To Make:
Preheat the oven to 350 degrees F.
Grease a medium-size casserole dish with butter. I use a glass 9 x 13 plan
In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined.
Pour the mixture into the prepared casserole dish.
In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture.
Bake for 25 to 30 minutes, or until golden brown.
