Loaded Cream Cheese Sausage Spinach Dip
I keep building on this wonderful dip. It was brought to my house for Christmas by my beautiful daughter-in-law. The original version is just cream cheese, rotel, and sausage. This is a very good dip. However, I wanted to do a twist for an upcoming Vine episode for football watch parties. I added in some fresh crisp bacon, and topped it with fresh baby spinach for some color. It was delicious and went very fast.
Today, I decided to add more to it. This wonderful dip just keeps growing, and growing, and growing. This batch I added some fresh green onion, and mild salsa to the batch. The results were spot-on! Remember, I have to make enough to feed about 12 at the office. This made a large crock-pot full. In fact, we have about a quart container left. This delicious dip is good hot, warm, or even cold!
Here's the scoop:
Ingredients:
1 pound Jimmy Dean Sausage (I used regular) == cooked & drained
6 pieces of bacon - cooked crispy (place in fridge to chill and your bacon will become more crispy)
2 double packages of Philadelphia Cream Cheese
1 can of mild Rotel
1/4 cup mild salsa
1 can drained Sweet Yellow Corn
1 cup Baby Spinach
1-2 diced Roma Tomatoes
2 green onions (chopped including the green stems)
2 Tablespoons Garlic Pepper (Lowry's)
1 Teaspoon or more to taste of Black Pepper
1/2 cup milk
Addition in 2020: add in 1/2 cup shredded Sharp Cheddar and 1/4 cup of Parmesan Mozzarella Cheese
Directions:
Brown Sausage and drain. Make sure you pat off grease. (You can cook ahead and chill overnight)
Cook Bacon until crispy and pat off grease. Place in Fridge until ready to chop into bits for dip)
In Crockpot -
On Medium heat or LOW
Add in Sausage, Cream Cheese, Salsa, Corn, Rotel and milk. The milk makes the dip creamer and easier to melt the cream cheese.
Add in your chopped onion and stir.
Add in Garlic Pepper and Black Pepper
Stir dip until it is completely creamed together
Add in chopped bacon and stir
Add in Shredded Sharp Cheddar & Mozzarella Parmesan cheeses and stir
Add the Baby Spinach, tomatoes & a the Mozzerella Parm cheese on Top and Stir right before you serve in cups
You can change Crockpot to High Heat and stir periodically until desired temperature. Add in the Baby Spinach (about a cup) and stir. Serve with pita chips or tortilla chips.
