DANISH WEDDING COOKIES
These are the best cookies to snack on. My husband and I love them. My co-worker’s love them.
These are perfect for bridal showers, receptions, rehearsal dinners, baby showers, or just simply to enjoy!
They are light and delicious and so easy to make. These remind me of the Wedding Cookie by Keebler. However, you can make them at home yourself.
I am helping a beautiful young Bride with a Rehearsal Dinner. The groom-to-be parents live out of state. I was eager to help with the Dessert Bar. Just a little over a year and a half ago I was planning a Dessert bar at the same Restaurant. We love Loca Luna in Little Rock, and it is the perfect spot to host a private party.
I am making a bunch of these Danish Wedding Cookies to put on the bar. I am also doing a variety of mini pies. I will be sure and take photos of the event tomorrow night.
I thought I would go ahead and share the recipe for the wonderful little cookie. This recipe makes approx. 2 Dozen:
DANISH WEDDING COOKIES
INGREDIENTS:
To make:Preheat your oven to 400ºF and grease a cookie sheet.
In a large bowl combine the flour and cinnamon. Set aside.
In another large bowl add the butter, pecans, powdered sugar, and vanilla extract, and beat until blended. Batter will be very stiff.
Using your hands, roll 1-inch balls and place on the cookie sheet.
Bake until light brown, about 10-12 minutes. Cool slightly then roll cookies in the powdered sugar. Cool completely before serving.

- 1/4 tsp cinnamon
- 1/2 cup butter, softened
