Hello Summer! Hello Potlucks!
This is the best time of the year to have those outdoor picnics and family potlucks. We finally got to do a memorial service for my brother, Ed. Ed passed from COVID back in the fall. The world shut down and we didn't get a chance to have any kind of service.
His 71st birthday would have been this past Sunday, May 16th, 2021. We all joined together and had a Memorial Service and Celebration of his Life. He led such a family oriented life. He had six children, and I lost count of how many grandkids. We had a great time. We laughed, we cried, we rejoiced, and we all ate a meal together. He would have loved it so much!
I made several dishes for the event. However, I brought this wonderful macaroni salad. I love a good cold pasta salad. This particular macaroni salad, I call my Sweet Southern Macaroni Salad. It has a tad of sugar in it. It also includes the Ruby Gold Red Tomatoes. These little grape cherry tomatoes are on the vine. I am obsessed with them. They really had some great flavor to the salad. I also use the green stems from the green onions. Just a handful, along with fresh shredded Parmesan cheese. Delish! Throw in some shaved carrots, garlic pepper, salt/pepper, Duke's mayo, sugar, and the results are so darn good!

On Stovetop:
In Medium Sauce Pan, bring half pan of water, and 2 tablespoons of Olive Oil to Boil – Bowl Macaroni until tender. DRAIN WELL
RUN COLD Water over Macaroni to chill.
Fold in Mayo and other ingredients, except Tomatoes, Green Onions & Cheese - I add those last. CHILL Pasta Salad over night or for a couple of hours before serving.

- 8 ounces macaroni uncooked
- 3 Green onion (STEMS) cut-off bottom of green onions (about 1 cup full to add to pasta salad)
- 1 cup Duke's mayonnaise
- 1 tablespoon mustard
- ½1 teaspoon salt – or to taste
- 1 teaspoon black pepper or to taste
- 1 teaspoon garlic pepper (I use Lowry’s)
- 1/2 teaspoon paprika – just a pinch
- 2 tablespoons lemon juice
- 3 Cherry Tomatoes (cut in half or fourths) I use the ruby reds on the vine
- 2 Teaspoons of Sugar
- 1/2 cup Shredded Parmesan Cheese
- 1 hard boiled egg
- 1/2 cup of shaved carrots (shredded)
