
Pasta Primavera w/Grilled Chicken
I do my Primavera a little differently. My husband loves corn so I use corn often in lieu of green peas. I also love the Pasta & Roni Angel Hair Pasta with Herbs. It contains just the right amount for the two of us. It will yield 4 servings after you mix all the other ingredients in.
I am one of those “make it your own” kind of people. I hear that often on The Voice regarding song choices. Blake & Adam often state “make it your own” I do that with cooking. I rarely follow the instructions on the box or packaging of foods.
Ingredients:
1 Box Pasta & Roni Angel Hair Pasta with Herbs
1 Can Whole Kernel Sweet Corn – I prefer Green Giant
½ Can Hunts Diced Sweet Onion Tomato
¼ Cup of Stella Fresh Parmesan Cheese
½ stick Butter ( I use Margarine)
4 Tablespoons Lowry Garlic Pepper –(my favorite “go to” ingredient)
Salt/Pepper to taste
2/3 Cup – Milk – 2%
1 Cup Water
To Make:
In medium sauce pan:
Remove Seasoning Package from the box of Pasta & Roni – set aside
Add in 1 cup Water, 2/3 Cup Milk, ½ Stick Butter – bring to boil
Once water starts boiling – add in the Angel Hair Pasta from the Box of Pasta & Roni -- stir
Add in the Seasoning Packet of Herbs
Add in your Lowry Garlic Pepper – about 4 tablespoons (or 3-4 good shakes from bottle)
Simmer for about 8 minutes – check this – it should float to the top and not be mushy
Add in DRAINED Whole Kernel Sweet Corn
Add in ½ can of the Hunts Diced Sweet Onion Tomato (drained) --- you can refrigerate the rest or pour over your Grilled Chicken – (that’s delicious)
If it is too wet – don’t worry you can drain some. You want it moist!
Serve on plate and top with Stella Fresh Parmesan Cheese – About 4-5 pinches for each serving! I serve along side of the Grilled Chicken as a side dish. I don’t mix the chicken in.
Grilled Chicken
I use my Gas Grill Top Pan – I am in love with this pan. It is the benefit of outdoor grilling in the comfort of your air condition home. If you don’t have a gas stove then grill as usual. If you do have a Gas Stove – purchase one of these! You won’t be sorry!
Cut Chicken Breast in Halves
Salt, Pepper
Put 2 tablespoons of butter on top of Chicken Breast
Put 3-4 big sprinkles of the Lowry’s Garlic Pepper Seasoning on top of each Breast
(this makes an excellent Garlic Butter Chicken)
Grill on low-medium about 20 minutes and it is done on my Grill Pan - check to make sure no pink inside!
Put on plate next to the Pasta Primavera - (Optional for a change – When chicken is almost done – top with the ½ can of the left over Hunts Sweet Onion Tomato) == makes it so good!
Serve on plate and top with a few pinches of the Stella Fresh Parmesan Cheese
