Tonight's Sunday Supper This is a perfect Southern main dish for a hearty Sunday Supper. Served with mash potatoes and some french green beans and that makes a great Sunday Supper for all. Now that the weather is turning a little cooler for this wonderful fall Season, it is time to bring on the hearty meals. My husband loves meatloaf. I like this particular recipe because of the brown sugar glaze. Moist and delicious meatloaf with a yummy brown sugar glaze. INGREDIENTS: 1/2 cup packed light brown sugar 1 cup ketchup 1 tablespoon Worcestershire sauce 1 1/2 pounds ground beef chuck 2 cloves garlic, minced 1 tablespoon Worcestershire sauce 1/2 cup milk 2 large eggs 1 1/2 teaspoons salt 1/4 teaspoon ground black pepper 1 package of dry onion soup mix 1/4 teaspoon ground ginger 3/4 cup Italian bread crumbs TO MAKE: Preheat oven to 350 degrees F ---Line a casserole dish with foil. In a small bowl, combine brown sugar, ketchup and 1 tablespoon Worcestershire sauce. Divide evenly among three separate bowls; set aside. In a large bowl combine garlic, Worcestershire sauce, milk, eggs, salt, pepper, soup mix, ginger, bread crumbs and one bowl (1/3) of prepared brown sugar/ketchup mixture. Add ground beef and mix to thoroughly combine. Shape into a loaf and spoon one bowl (1/3) of prepared brown sugar/ketchup mixture onto the top of the loaf. Place the meat loaf, brown sugar/ketchup side down, into prepared casserole dish. Top with remaining bowl (1/3) of prepared brown sugar/ketchup mixture. Bake in preheated oven for 1 hour, until juices are clear. I do the fork test and make sure it is cooked through in the middle. Let stand 5-10 minutes before slicing. The air is a tad cooler here in Little Rock. I am so ready for Fall. I love the aroma's of fall cookin' in the kitchen. Fall by far is my favorite Season! Tonight's Sunday Supper consisted of Mozzarella Stuffed Chicken, Mashed Potatoes and those Best Darn French Green Beans that I have posted about. We were pleased with tonight's supper. For the chicken I headed to The Fresh Market and purchased for $3.99 each the pre-stuffed mozzarella chicken breast. These are delicious and don't take long to make. I just pre-heated the oven to 375 Degrees, Topped with the Lowry's Garlic Pepper and a half cup of the Bertolli's Marinara Sauce. Bake at 375 Degrees for 25 minutes and the are delicious and tender. The Mash Potatoes - I love the red potatoes to make my mashed potatoes. My mama only used red potatoes. I grew up loving them and they don't disappoint when you want to make mashed potatoes. The nice thing about mashed potatoes is that you can make them in so many different ways by just changing or adding some ingredients. Tonight's potatoes I just used one stick of the Country Crock's Unsalted Stick Butter, 1/4 cup of 2% Percent Milk, Salt, Pepper and topped with just a sprinkle of chives. I used a hand whisk to cream them together. They were delicious and went well with the Mozzarella Chicken. French Green Beans - This is the only way you will get me to eat green beans. I am not a fan of standard green beans and sure don't want them canned. These are awesome! I buy them fresh at The Fresh Market. Soak them in the Wish Bone's EVOO Avocado Dressing while you are boiling your potatoes. After you soak, put in a small pan, along with the EVOO Avocado Dressing and top with about 1-2 tablespoons of the Lowry's Garlic Pepper. Cook them on your stove top on low and let simmer until tender. They only take about 10-12 minutes and they are great! This meal is easy to make and can be done in about 30 minutes max. Also, an inexpensive meal for two. The total meal averaged around $7.00 each. That includes adding in the extra ingredients. The couple of local restaurants that serve this type of food would run about $12-16 dollars each. Enjoy your Sunday Supper's together! They come and go so quick. xoxo - Pat
Pat’s Italian Meatballs
My co-workers love Meatballs. I make them periodically in the office in a crock-pot for them. The fun thing about meatballs is that you can change them up and get a completely different flavor. You can put them over pasta, over subs, over toast, eat them by themselves with sides, and they list goes on and on. I thought that I would make them last night for Sunday Supper. Sunday Suppers are good for good ‘ole southern comfort food meals. I made Italian Style and served with black-eyed peas and crinkle oven fries. You can find great options for Meatballs at your local supermarket. There are gluten free options as well as a variety of base choices. When making them Italian Meatball Recipe I go with the Italian Meatballs by Cooked Perfect Italian Meatballs. The Cooked Perfect Brand are delicious and offer all-natural choices as well as gluten free. You take them right from the freezer into the crock-pot and let them simmer on medium/high and they are done in about three and a half hours. At work, I put them on at 8:00 and they are ready for lunch served at 11:30. For dinner, I put them on at 2:30 and they were ready by dinner at 6:00. Ingredients: 1 pkg of the Cooked Perfect Italian Meatballs (I use the 24 count – which gives you larger meatballs) 1 jar – Bertolli Tomato & Basil Sauce Lowry’s Garlic Pepper Salt/Pepper ¼ cup sugar – (I add to take out the tart taste of the tomatoes plus gives them a sweet savory flavor) ¼ Cup of Stella Fresh Parmesan Cheese Parsley Flakes for garnishment ¼ cup water To Make: Place Frozen Meatballs in Crock-Pot Add Salt/Pepper and I use generations amount of Lowry’s Garlic Pepper (5-6 good sprinkles over each) Pour entire jar of Bertolli Tomato & Basil Sauce over Meatballs Add ¼ cup water and stir Let meatballs simmer on high for about 2 hours. Stir periodically if you can. Add in the ¼ cup of sugar and stir in. Add in the ¼ cup of Stella Fresh Parmesan Cheese Garnish with parsley flakes and serve P.S. I add more Lowry's Garlic Pepper to mine right before I serve. NOTE: If you are serving them on subs – Add 3-4 meatballs on Sub Bread Top with Kraft Shredded Parmesan and Mozzarella Cheese Place in oven at 350 degrees for approx. 10 minutes Delicious either way. Xoxo Pat There is nothing like a great breakfast casserole for a good Sunday Supper meal. Especially when it is storming outside like it is here in Little Rock, Arkansas today. This casserole can be made the night before or at least 2.5 hours prior to baking. It takes about 30 minutes to get it ready, place in fridge for two hours and then take out and bake. Who doesn't like a good breakfast casserole? This one is yummy and includes hash browns on the bottom in lieu of the bread. Delicious xoxo Pat I can't think of a better dish for Mother's Day Night. Good 'Ole Southern Chocolate Gravy and biscuits. That is as Southern of a dish as it comes! CHOCOLATE GRAVY Ingredients: 1 ½ cups sugar 2 ½ Tablespoons flour 2 ½ Tablespoons Cacao -- Hershey’s Special Dark 100% Cacao of course! 1 ½ cups milk – I use 2% ½ cup water A few drops of vanilla (optional) To Make: Mix sugar, flour and cacao in a large skillet then add the water to mix. Add the milk and cook on medium heat until thick. Add the few drops of vanilla while cooking (optional) Serve over hot buttered biscuits -This is one of my favorite casserole's to make! I have been making this for at least 30 years. My kids loved it so when they were little and love it now as adults. My son even makes this himself now. The nice thing about this dish is that it re-heats so well. My son would literally it this every day for a week when he was a teenager. It is a great dish for Sunday Supper this week! You can serve with the sweet yellow cornbread or my husband likes it with just crackers as well. Cheeseburger Casserole --- Kraft Cooking Made Easy Ingredients: 1 Box of THICK & CREAMY Kraft Mac-N-Cheese 1 Cup Milk - I use 2% ½ Stick Butter Lowry’s Garlic Pepper Salt/Pepper 1 Can Sweet Yellow Corn ½ can of Hunts Sweet Onion Diced Tomato 1 Lb Lean Ground Beef 1 Medium Pkg of Kraft Sharp Cheddar Cheese To Make: In Sauce Pan bring – 1 1/2 cups water or ½ pan of water along with 1 cup Milk, ½ stick butter to boil When water comes to a steady boil – pour in the noodles from the Kraft Thick & Creamy Mac-N-Cheese Bowl on Stove Top until Macaroni floats to top - about 12-15 minutes Add in the package of the Cheese Mix that comes with the Kraft Thick & Creamy Mac-N-Cheese Add 1 Tablespoon of the Lowry’s Garlic Pepper Salt/Pepper -- A couple of pinches of each Stir ==== In Skillet – Brown the 1 lb Ground Beef --- (drain) I wipe skillet down after I drain to get any excess fat out of pan Pour the Drained 1 can Sweet Yellow Corn on top of browned Ground Beef Pour the ½ can of the Hunts Diced Tomato Sweet Onion on top – and stir together Pour the Sauce Pan of the Completed Mac-N-Cheese on top in skillet Add 4-5 pinches of the Lowry's Garlic Pepper Stir and let Simmer for about 10 minutes Transfer to Casserole Dish Top with the Pkg of Shredded Sharp Cheese and either melt in Microwave for about 2 minutes or Oven # 350 degrees for 10 minutes P.S. – If you need take to a Potluck you can even pour all in Crockpot and leave on low This dish re-heats very well. To reheat --- Add a little more cheese on top and melt. You can add a little milk to the dish when you re-heat to make creamier. Enjoy! Pat Often when you have a busy weekend full of activities you just need to have a simple Sunday Supper. I wasn't very good this week with my eating habits. I don't do well with digesting red meats. My blood pressure meds zap away my potassium so I try and eat bananas often. Bananas will also keep my legs from cramping! I fell in love with Pumpkin Noosa Finest Yogurt and thank goodness that Walmart is still carrying this delicious flavor. It is nice to have a little Fall on Cold Spring days. I love to take Yogurts of various flavors and make a delicious Sundae with them. By putting the bananas on the bottom of the bowl, folding the other ingredients on top, gives them a whole new flavor! Give this a try...you won't be disappointed. Of course, if you are going to have Sunday Sundae you have to have Hershey's Chocolate Syrup (I use the Lite or Simple) and Reddi Whip! This makes a perfect Sundae and a filling Sunday meal for me! You Sunday cereal lovers need to try this and mix it up a little! Enjoy! Pat P.S. This is actually a filling meal - Caution: approx. 350-400 calories in this Sundae. But, if it is your meal - you are good! There is nothing better to me than Breakfast or Brunch food at Supper time.....especially on Sunday's! This recipe is so easy. You make it the night before and refrigerate over night. Then you just pop in the oven at 350 degrees for about 40-45 minutes. Take out and rest for just a couple of minutes and then slice. Ingredients: 1 pound of Jimmy Dean Country Mild or Regular Sausage (I prefer Country Mild) 6 eggs 2 cups of milk (I use 2 percent) 1 16 oz Pkg of Kraft Shredded Cheese (I use Sharp - but some like Mild Cheddar) Salt Pepper 6 slices of Wonder Classic White Bread Butter To make: Brown Sausage in pan on stove - Drain - set aside Whisk together the 6 eggs in a bowl with the 2 cups of milk - salt & pepper to taste (set aside) Spray a 9 x 13 pan - (I prefer glass) with Pam Cut crust off around the bread slices Lay the bread slices in the pan (all the pan should be covered) Lightly spread butter on top of the bread slices (very lightly) Spread your cooked Sausage evenly throughout the top of the bread slices Top with Cheddar Cheese (spread evenly) Pour your whisked egg whites and milk evenly throughout your dish Cover and Refrigerate over night The next day or night: Take Casserole out of the refrigerator and set aside until oven preheats Preheat oven to 350 degrees Place uncovered dish in oven and bake for approx. 40-45 minutes Dish is done when you can fork it like a cake Take out oven and rest for approximately 2-3 mintues Slice and serve Serve with your favorite fruit and drink. Tonight's Sunday Supper featured White Bean Soup, Ham Steak, Cheese Slices and Sweet Yellow Cornbread.
I love White Bean Soup! There are various ways that I make it and all very different. One of my favorite recipes is simple and is very tasty! I like to leave it vegetarian and you can add the meat as the side item. This keeps it from being so salty and not all meals need meat. However, my husband seems to think that he needs to have meat at all meals! Crock pot White Bean Soup Recipe for tonight: Ingredients: 3 cans of Bush's Great Northern Beans (drain the juice) (Bush's is the best) 1 White Onion 10-12 small chopped Baby Carrots 1 can Hunts Tomato, Celery & Onion (I use this in so many things) Salt Black Pepper Lowry's Garlic Pepper (This is my "go to" ingredient) 1 cup water To make: Drain the Bush's White Bean Cans and dump into Crock-Pot Chop about 1 handful -- ( 1/2 cup) of white onion and put on top Chop the Baby Carrots (about 10 small ones) or 1 large carrot - chop small and add to Crock Pot Pour the 1 can of the Hunts Tomato, Celery & Onion on top of the above ingredients in Crock-Pot Sprinkle about 1 teaspoons of Salt and Black Pepper - as soup is cooking I do the "taste" test and add more. ,,,,,,,,,,generally I add in more Black Pepper as it simmers. Sprinkle in the Lowry's Garlic Pepper (about 5-6) good sprinkles. Again, add more as it simmers Add in about 1 cup of water. Simmer on low for about 4-5 hours. This soup is delicious and goes great with The Sweet Yellow Cornbread Recipe we have! You can eat the soup like I do by itself or serve a heated ham steak on the side and a couple slices of cheese to make my husband's version of a hearty meal! Nothing better than a Sunday. Sunday's are for taking care of your Soul. Through Church, Family and good ole' Sunday Supper. My idea for a Sunday Supper is slow-cooking comfort food. I love the way the house smells from the aroma's of the food.
