
You have those days when you get home and just want cake! I really have those days when I want to bake a cake so that we can #eatcakeforbreakfast!

This delicious cake really is so moist. The combination of the pineapple & juice blend perfect with the French Vanilla Base. I through in a half a cup of pecans, and named this beauty - Pat's PPP Cake. For Pat's Pineapple Pecan Cake. PPP is perfect! I mean, this is the year of the Pandemic and everyone wants PPP. Everyone did want this cake at the office today.

Here's a little tidbit for you: If you have a really good box cake mix, you can spruce it up and make it the best cake ever! You just need to substitute water for milk! Whether I bake from scratch, or use a box, I always always use milk. If the recipe calls for 1 cup water, you simply substitute 1 cup of milk. I use 2% milk. The results are so good!
Also, when making a cake with some canned fruit, don't add all the juice. For instance, I only put in 1/4 cup of the Pineapple Juice from the can. Or about 1/4 of the can. Too much pineapple juice, and your cake will be a soggy mess. Then I scooped out the pineapple chucks with a spoon. Again, I only used 1/2 the can. So, about 1/2 cup - 3/4 cup. Then I added in 1/2 cup of chopped pecans. That gave the cake all the substance it needed. DELISH!
I'm not a big icing fan. I want to taste the cake. A good moist cake, doesn't require all that icing. I generally will top with a little powder sugar, or use a little sauce, like chocolate, caramel, etc. Torani makes great sauces for cakes! This cake, didn't need a sauce to take away from the Pineapple. I just used a little dusting of powdered sugar on top. SO GOOD!
Ingredients
1 Box Duncan Heinz French Vanilla Cake Mix
1 Cup Milk
3 eggs - I use cage free brown large eggs
1/3 cup of canola oil
1/4 cup of Pineapple juice from your Doyle Pineapple Chunk Can
1/2-3/4 cup of the Pineapple Chunks
To Make
Preheat Oven to 350 Degrees
In Stand Mixer Add in your 1 Box of French Vanilla Cake mix, then fold in the rest of ingredients, except for pecans. Mix on medium for about 2 minutes. Then, add in your pecans, and stir them in.
Grease Bundt Cake Pan - I used oil and also spray. I use those fancy bundt pans. Therefore, you have to really oil them down. Don't flour on bottom.
Pour batter evenly into the pan and bake at 350 for about 30-35 minutes. CHECK IT with the toothpick at 30 minutes. It always cooks faster than it calls for. You want to take it out at the pretty golden color. Don't over bake!
Let cool until your pan touches to cool. At least 30 minutes. Transfer to cake plate, dust with powdered sugar.
